The Halkidiki olives take their name from the Halkidiki Penninsula in northern Greece where this olive tree variety is cultivated.
According to the local tradition, the olives are collected manually from the trees. They are bright green, oval shaped olives, large enough even to be stuffed (with garlic, dried tomatoes, cheese, almonds etc).
The most popular forms include whole, pitted, sliced or halved. The Halkidiki green olives could be offered as natural, in brine solution, pasteurized or oxidized.
